Vegetarian Diet and Innate Immunity in Patients With Myocardial Infarction and in Healthy Volunteers (FRESH-MI Study)

This study looks at how a vegetarian diet affects the body's natural defense system (called **innate immunity**) in people who had a recent heart attack (**myocardial infarction**) and healthy volunteers. Participants will try a vegetarian diet for five weeks, take a break for six weeks, and then try another diet for five weeks. Blood tests will check for inflammation, which is the body's response to injury or infection. Participants also fill out a questionnaire at the start, after 12 weeks, and after nine months to see if they are willing to eat more vegetarian foods.

  • This study lasts about 20 weeks, including diet changes and breaks.
  • Blood samples are taken at different times to check health changes.
  • Participants must not already follow a vegetarian or vegan diet.
